This is one of my fall go-to recipes. I've used a couple of different apple pumpkin muffin quality recipes previously but this is actually the first gluten-free release. I added cranberry sauce to 1 batch and treasured what it do to the structure of the muffin. You can view it in the picture above. The center row of muffins has cranberry sauce added to the mix. It definitely made the muffins pop-up more.
Like I said, I spent the day in your kitchen building different variations of pumpkin formulas. I'll share well known with you. It was a tough choice. We attempted adding apples, cranberries, sunflower seeds, and cranberry sauce in all different combinations. This is what we developed.

Fall months Madness Muffins
1 tsp cooking soda
2 eggs (or egg replacer for eggs, we used EnerG Egg Replacer )
1 cup canned pumpkin
1/4 cup cooking food oil
2/3 cup cranberry sauce
2 cups chopped apples
2. Combine initial 5 substances in a large bowl.
3. Combine egg, pumpkin, oil, and cranberry sauce inside a smaller bowl, after that stir into dry ingredients.
4. Fold apples into mix and allow to sit down for 10 minutes.
5. Fill up paper-lined muffin tin with mix and bake 28-35 moments.
Cinnamon Pumpkin Frosting
2 Tbsp canned pumpkin
1-3 tsp allergy-free milk (we use rice milk)
1. Mix all ingredients (except dairy). Gradually add milk until desired uniformity.
