Cinnamon Raisin Harvest Muffins

As I currently have a little time, I was looking on the internet last week. Trying to find fresh, interesting ideas, inspirational meals that I've never tested before, to treat my loved ones with. Looking for a while yet could not find too many interesting stuff. Right before I thought to give up on it, I ran across this scrumptious and easy dessert simply by chance. The dessert seemed so delightful on its snapshot, that called for quick action.
It was not difficult to imagine just how it's created, how it tastes and how much boyfriend is going to like it. Actually, it is rather simple to delight the guy when it comes to cakes. Anyhow, I visited the website: Ambitiouskitchen and then followed the step-by-step instuctions that had been combined with nice pictures of the task. It really makes life quite easy. I could suppose it's a bit of a inconvenience to shoot photographs in the middle of baking in the kitchen as you typically have sticky hands therefore i pretty appreciate the time and effort she put in to build this post .
Having said that I'm inspired to present my own, personal recipes in the same way. Many thanks the idea.
I was tweaking the main mixture create it for the taste of my family. Need to tell you it turned out a great outcome. They loved the flavour, the thickness and enjoyed having a sweet like this during a hectic week. They ultimately asked for more, more and more. Hence next time I am not going to commit the same miscalculation. I am gonna double the quantity .

My friend at the job continues to be eating whole foods and wanting new recipes on her behalf family. She asked me if I knew of a wholesome cinnamon-raisin formula of some sort. She got me considering…
Since I have been feeding on Paleo, I miss things like cinnamon raisin toast, oatmeal and raisins, and also Raisin Bran. What I must say i needed was that nice cinnamon-raisin taste without the grains, dairy products and refined sugars.
I developed this paleo and gluten-free muffin recipe after a couple of failed attempts to obtain the ideal cinnamon and raisin flavor I was longing for. The very first batch wasn't as well bad, but not great. I don't wish to post the average formula on my blog. I really want it to become exceptional so you'll check it out and keep coming back for more! So I went back to work in the kitchen for more experiments and family flavor tests.
I'm very happy with this cinnamon-raisin muffin recipe now. I added a shredded apple as well as the raw maple syrup which actually helped bring everything jointly. And a lot more raisins. Dried fruit is not especially Paleo I understand, but my kid said, if you are gonna make a raisin muffin mom, there must be some atlanta divorce attorneys bite. Good stage. And besides, the raisins seem to soak up a little of the maple taste to make every bite that much more great. So now i am all in with the raisins within this formula. Plus both my son and hubby wanted a little more spice, so I notched that up a little too.
I know its summertime, but the aroma and tastes of the muffins remind me of a fall harvest…the fact we reside in Arizona and it's 110 degrees right now may have something regarding it.
But healthy and hearty muffins are usually in season if you ask me. I am hoping you give this easy paleo muffin recipe a go sometime and i want to know what you think!
1 cup of raisins
1/2 cup of pure maple syrup
1/3 cup of coconut milk
1/4 cup of coconut oil
1 tbs of coconut flour
1 tbs of cinnamon
1/2 tsp of cooking soda
Coconut sugars, cinnamon & extra raisins to sprinkle in muffin tops after baking if desired
Stir all dry ingredients together inside a dish (except raisins)
In a more substantial bowl, mix jointly all wet ingredients
Shred having a cheese grater one peeled and cored apple. Increase moist ingredients
Pour the dry ingredients in to the bowl with the wet ingredients and blend well
Stir within the raisins
Pour mixture into silicon or paper mugs in a muffin tin
Pre-heat oven to 350 levels and bake for approx. 20-23 minutes (check for doneness using a toothpick)
Remove muffin tin from oven and lightly sprinkle muffin tops with a dry mixture of equivalent parts coconut glucose and cinnamon natural powder while even now warm. Place a few extra raisins on top of each muffin if desired
Allow to awesome before enjoying
Makes about 12 muffins
Keep staying muffins covered in refrigerator, or freeze and reheat later on inside a microwave

I'm from the Netherlands though and it's really nearly impossible to find any coconut flour, is there something I can replace it with?
I cannot eat eggs.
Would this recipe be okay strawberry Smoothie with yogurt chia eggs, flax eggs, or another type of egg replacement?
