Hunting for a long time but could not discover lots of interesting stuff. Just before I thought to give up on it, I came across this tempting and simple dessert simply by luck at ambitiouskitchen. It looked so yummy on its photos, it called for prompt action.

Coconut Poke Cake
A fluffy, moist wedding cake infused with Cream of Coconut and topped having a light and airy cream cheese frosting.
Boxed white wedding cake mix (with ingredients to prepare as directed)
15 oz. cream of coconut (found in the aisle by the alcoholic mixers)
14 oz. sweetened condensed milk
12 oz. sweetened coconut
2 cups large cream
Prepare boxed cake as directed and remove from oven.
While still warm, poke openings into the wedding cake (I used a wooden skewer).
In a dish, mix collectively Cream of Coconut and sweetened condensed milk.
Pour the coconut mix on the warm cake.
Frost when cooled and refrigerate for in least 2-3 hours.
FOR THE FROSTING
Add the heavy cream and combine on high until thickened.
Blend in the vanilla remove.
When pouring on the Cream of Coconut and sweetened condensed milk mixture, may very well not use it most. I normally pour about ½ - ¾ of the mixture to ensure the wedding cake stays fine and fluffy.
