Phew. First two weeks of classes possess officially been conquered, and the fact that I'm a junior in university is slowly needs to negotiate in. It's beyond odd, and I'm not really ready to get to complete terms with it, therefore instead of discussing the fact that I'm halfway finished with college, we will talk about banana delicious chocolate chip muffins.
These vegan blueberry muffins possess stayed probably one of the most well-known recipes in my site, and I've been wanting to create a gluten free banana oatmeal muffins-free version for a while now. However, I was scared of these turning into that horribly grainy, weirdly crunchy consistency that gluten free of charge baked goods occasionally turn into. Thank heavens, these muffins aren't like that at all.
In fact, I still left them in the home in the counter, so when I got back again, everyone was telling me how great the muffins were. They had absolutely no proven fact that these infants were gluten free and vegan. You really, truly, can't actually tell.
For this recipe, I used Bob's Red Mill GF All-Purpose Flour, which will a great work in muffins. It creates a wonderful structure and doesn't give off any weird, off-putting flavors.
These whip together super easily in one bowl, and so are versatile beyond belief. I opted to create my muffins banana chocolate chip flavored (yum!), nevertheless, you can definitely play with flavors and make them into any taste muffin that you and your family prefer! You should use any type of milk you want (almond, soy, coconut, or regular cow's dairy…all are great!). Unless you need them to be gluten-free, make use of all-purpose or whole wheat grains instead (or even a combo of both).
We made them another time after this batch aswell, and that point I split the batter in two and added chocolates potato chips and swirl of peanut butter to fifty percent, and blueberries towards the spouse. Both worked incredibly. Enjoy these! Make sure they are your personal - they are able to take it. The bottom recipe is normally my ultimate favorite and creates this type of sensitive, light, delicious muffin.
I hope you try - and enjoy - and I hope the start of fall is treating you well!

Rachel, these look delicious! I've experienced banana choc chip muffins before, and I always liked them. These look good, and it's great how the batter is indeed versatile.
My grandmother was quite the cook/baker up until recently, but she became a little discouraged once she developed a gluten intolerance. I'm often on the lookout for tasty gluten-free dishes that I can lead to her. Thanks a lot for writing these. I'll certainly be bringing her a batch next time I find her!
I have to get on that GF flour!!
I'm so glad I've found your recipe! I've allergy symptoms to gluten and egg so find it therefore hard to create nice tasting baked products, my cookies are crumbly and my muffins are stodgy.
In this formula I substituted the coconut oil for butter as I didn't have any coconut oil in, as well as the muffins were delicious - taste just like the muffins I recall from before my allergies, otherwise better!!
So thanks a lot for publishing this recipe, I shall definitely be making these muffins again.
I cannot have sugar, just what exactly can I use instead???
