I'm so glad I've found your recipe! I've allergy symptoms to gluten and egg so find it therefore hard to create nice tasting baked products, my cookies are crumbly and my muffins are stodgy.
In this formula I substituted the coconut oil for butter as I didn't have any coconut oil in, as well as the muffins were delicious - taste just like the muffins I recall from before my allergies, otherwise better!!
