As I currently have some time, I was surfing on the web last week. In search of fresh, challenging thoughts, inspirational recipes that I have never tried before, to treat my family with. Hunting for a long time unfortunately couldn't come across too many interesting stuff. Just before I wanted to give up on it, I stumbled on this delightful and simple treat by luck over Suncakemom. The dessert looked so delightful on its photo, that called for fast action.
It had been not so difficult to imagine just how it's created, how it tastes and just how much my hubby might enjoy it. Mind you, it is extremely simple to delight the guy in terms of puddings. Yes, I'm a lucky one. Or possibly he is.Anyways, I got into the site and followed the step-by-step instuctions which were accompanied by nice pictures of the method. It just makes life less difficult. I can imagine that it's a slight hassle to take photographs in the midst of baking in the kitchen because you most often have sticky hands and so i genuinely appreciate the effort and time she devote to build this blogpost and recipe easily followed.
That being said I am inspired to present my personal formulas in a similar fashion. Thanks for the idea.
I had been tweaking the main recipe to make it for the taste of my family. I have to tell you it had been an awesome success. They prized the flavour, the overall look and enjoyed getting a sweet such as this in the midst of a hectic week. They basically asked for even more, a lot more. Hence the next time I'm not going to commit the same miscalculation. I'm gonna multiply the amount to keep them happy.

Vanilla Low Carb Muffins

Egg beater or mixer
2 medium size mixing bowls
Measuring cup
Muffin tray
Muffin baking cups I use silicone ones, they make your life easier
Kitchen gloves
Ingredients:
This recipe dwells 24 muffins. If you want only the half of it you can half the ingredients easily.
1⅔ cup / 200g Flour
1 tbsp Baking powder
Instructions
Measure flour in a measuring cup or on a scale.
Mix baking powder into the flour.
Break the eggs one by one. Separate egg yolks from whites. This step could be a bit tricky so don't worry if you cannot do it at once.
Put yolks in one mixing bowl and whites into the other one.
Beat egg whites until hard peaks form.
Mix vanilla extract yolk and honey.
Beat egg yolks until you get a light yellow mixture.
Carefully fold in the flour with the egg yolks. If the batter is too hard to stir, put the water in alternating between the flour and the water.
When you have an even mixture fold in egg whites as well.
Try not to break the whites. It will give you the airy consistency after baking.
Spoon pastry into the muffin holders. 2 or 3 spoonfuls into one holder.
Decorate them with the sugar flakes.
Pop the muffin tray into the preheated oven for 15-20 minutes.
Serve muffins hot or cold.

6 tablespoons water
